RESTART® Friendly Banana Ice Cream

There has been record-breaking heat in some areas of the northern hemisphere recently. Finding ways to cool off is always a priority. Those commercially made frozen sweet treats may initially taste good, but can end up making you feel dehydrated. We want to share a great (quick and easy) alternative. A frozen dessert made from green-tipped bananas not only cools you down, but won’t leave you feeling thirsty!
Why bananas that have green tips? They are lower in sugar and starch than their more ripened companions.
Below is a great recipe from The RESTART® Cookbook that’s refreshing and so easy to make. Besides the initial freeze time for the bananas, it takes just a couple of minutes to combine and serve.
You can top it with chopped nuts, unsweetened shredded coconut or coconut flakes, raw cacao nibs, or a few berries.

Our “taste testers” (aka, kids!) really enjoyed these toppings we chose: toasted unsweetened shredded coconut with cinnamon and mineral salt, pecans, and raw cacao nibs. Give it a try and discover your own favorites!
Banana “Ice Cream”

Makes 2 servings
Ingredients:
- 1-2 frozen green-tipped bananas (peel before freezing)
- 2-4 Tbsp coconut cream (optional)
Directions:
- Blend frozen bananas and optional coconut cream in food processor. The consistency will be like a soft serve.
- Add shredded coconut, nuts, etc., as a topping.
Garnishes shown:
Toasted unsweetened coconut with cinnamon and mineral salt
Cacao nibs
Chopped pecans.
⇨ Pro tip #2: The whole banana will take a while to freeze, so if you want (almost) instant gratification, cut into 1/2 inch slices after peeling and place on a parchment lined baking pan and freeze for about an hour.
